Technically this is not a Pechuga, because they use no meat, but it has most other characteristics.
The Bruxo Mezcal Artesanal No. 2, known as Pechuga de Maguey, is a unique mezcal that combines Espadn and Barril agave varietals. This mezcal, crafted by maestro mezcalero Herminio Coronado, uses an unconventional process where roasted agave hearts (the pechuga element) are infused after the second distillation, giving it a robust agave flavor with minimal smokiness. The result is a mezcal with a silky body and a rich, complex taste profile featuring earthy, green peppercorn notes, caramel, and hints of marzipan on the nose. The mezcals distinct herbal and subtly salty character make it stand out as a full-bodied yet surprisingly clean spirit.
