Sourced from old-vine PinotNoir vineyards within GevreyChambertin, this Bourgogne Rouge is effectively Gevrey in Bourgogne clothingconcentrated and finely structured. Grapes are hand-harvested, fully destemmed, and fermented in concrete vats using indigenous yeasts. Gentle punchdowns ensure balanced tannin and color extraction, followed by malolactic fermentation in barrel and levage for at least 12 months in oak. The wine is bottled without fining or filtration and becomes naturally clear after two winters in the cellar.
