  • Viticulture:Certified organic (Ecocert, 2023), biodynamic methods.
  • Vinification:No added SO2 during vinification or aging. 40-60% whole cluster, 2-week ambient yeast fermentation. Aged for 18 months in barrels (0-20% new). SO2 added before bottling (25-40 ppm total).
