This benchmark vineyard is widely regarded as Burgundys top Premier Cru and often considered “Grand Cru in all but name”. From ~0.9ha of southeastfacing vinesmostly over 50 years oldplanted in marllimestone soils that encourage deep root systems and ideal ripening.
The vineyard is handharvested and vinified with indigenous yeasts, typically including partial wholecluster to emphasize structure. Fermentation takes place in open-top vats with gentle extraction techniques. Elevage is carried out in used oak barrels (virtually no new oak), aged for roughly 16 months before bottling unfined and unfiltered.
