Pinot Noir from estate parcels around Volnay on shallow, stony limestoneclay; the domaine farms biodynamically and harvests by hand. The fruit is sorted with a measured share of whole clusters when perfectly ripe, then fermented with indigenous yeasts in open vats with gentle extraction. levage runs ~12 months in older 228-L pices (no new oak), with minimal racking; SO is modest and added after malolactic. Bottling is done without fining and only a light filtration if needed.
