Fruit is rigorously sorted with a measured share of whole clusters when perfectly ripe, then fermented with indigenous yeasts in open vats with gentle extraction. levage runs 1215 months in older 228-L pices (no new oak), with minimal racking; SO is modest and added after malolactic. Bottling is done without fining and only a light filtration if needed.
