5 Sentidos Madrecuixe Mezcal is produced in the heart of Oaxaca, Mexico, where the wild agave plants are hand-harvested from the rugged terrain. The Madrecuixe agave, with its tall, cylindrical shape and rich sugar content, is carefully selected at peak maturity. The agave hearts, or pias, are roasted in traditional earthen pits over a wood fire, infusing the spirit with a distinctive smoky aroma. After roasting, the pias are crushed using a stone tahona, fermented naturally in open-air wooden vats, and distilled in small copper pot stills by skilled mezcaleros.
