The Distillerie du Peyrat Organic Selection is an elegant, youthful organic cognac that combines freshness and roundness with bright fruit and floral character. It offers a delicate balance of light oak, honey, and orchard fruit ideal as an accessible entry point into organic cognac or a refined mixing base for lighter brandy cocktails.
Distillerie du Peyrat, situated just east of Cognac town, is one of the more committed organic houses in the region. They have been producing 100 % certified organic cognacs for decades, overseeing every step from vineyard to cellar.
The Organic Selection blend is composed of relatively young cognacs (typically aged 3 to 4 years minimum) drawn mostly from their own vineyards in the Fins Bois cru. These plots benefit from proximity to the Grande Champagne zone, enabling wines with good structure yet soft maturation profiles.
Distillation is performed in traditional Charentais pot stills, and the resulting eaux-de-vie are aged in French oak (Limousin) barrels. Their fatty distillation approach yields richer, more textured spirit even at younger ages. The house publishes it at 40% ABV, non-chill filtered, and with natural color in line with organic philosophy.
Nose:
Soft and expressive pear blossom, fresh peach, light tropical fruit (mango/lychee hints), honeycomb, and gentle vanilla.
Palate:
Silky and rounded. Orchard fruit (pear, apple), white tea, honey, and floral tones dominate early. A touch of toffee or almond may appear, with restrained oak spice to support structure without overreaching.
Finish:
Clean and moderately long. The fruit lingers with soft spice and a gentle dry edge, making it inviting rather than demanding.
Serve neat at room or slightly chilled to appreciate its aromatic subtlety
Use in lighter brandy cocktails sidecar, French 75 variants, or cognac spritzes
Pair with fresh fruit tarts, almond financiers, or light pastries
Also pairs with goat cheese, brie, or mild aged cheeses that wont overshadow its delicacy
