Dolin Gnpy le Chamois is a vibrant alpine liqueur crafted in Savoie, France, since 1821, using wild Artemisia mutellina (mountain sage) harvested from high mountain slopes and distilled in traditional copper stills. This liqueur boasts a luminous pale green hue and delivers a bold, herbaceous profile with notes of mint, pine, lavender, and a touch of sweetness, culminating in a long, warming finish. Whether sipped neat, added to hot cocoa, or mixed into cocktails, it offers a unique taste of the French Alps.
In a pinch, this is an excellent alternative to Green Chartreuse.
45% ABV, 750 ml
Prepare a double rocks glass filled with ice.
Stir with ice:
2 oz rye whiskey
0.25 oz Zirbenz Stone Pine Liqueur of the Alps
0.25 oz Dolin Gnpy le Chamois Liqueur
0.25 oz 1:1 simple syrup
Strain into the prepared glass.
Garnish with an orange peel.
Stir with ice:
1 oz London Dry Gin
0.75 oz Suze Liqueur
0.75 oz Cocchi Americano Bianco
0.5 oz Dolin Gnpy le Chamois
1 barspoon white crme de menthe, like Tempus Fugit
3 dashes lemon bitters
Strain into a double rocks glass over a large ice cube.
Garnish with a rosemary sprig

1.5 oz brandy
0.75 oz Dolin Gnpy le Chamois Liqueur
0.75 oz lemon juice
0.5 oz simple syrup
2 dash Angostura Bitters
Double-strain into a coupe.
Garnish with a lemon peel.
