Philosophy & Process:
Sugarcane is hand-harvested (no burning), pressed the same day, and fermented in open-air vessels (about 24 hours).
Distillation is performed in direct-fire copper pot stills, using the sugarcane bagasse (fibrous residue) as fuel.
After initial maturation (612 months in steel / neutral vessels), the spirit is aged for 2 years in umburana wood casks (Brazilian cherry wood), giving distinctive aroma and complexity.
