Papa’s Pilar Spanish Sherry Cask Finish Dark Rum is a globe-trotting blend of rums aged up to 25 years, solera-aged in bourbon, port, and Spanish Oloroso sherry casks, delivering rich notes of hazelnut, toffee, and toasted oaka bold tribute to Hemingway’s adventurous spirit.

Papas Pilar, the award-winning, premium sipping rum inspired by Ernest Hemingway, has released 1200 cases of a new 86-proof Sherry Cask Finished Dark Rum. The team of Master Blenders created this limited-edition expression of Papas Pilar Dark Rum, which, after solera aging, is finished in Spanish Sherry Casks, allowing for a complex interaction between rum, and the once used Bourbon-soaked staves.

By building off the strong base flavors found in our dark rum and allowing additional time for the blended rums to meld together, this special release has developed a slight sweetness combined with a uniquely spicy finish, resulting in a smoothness and complexity second to none, said Ron Call, head of rum production. The magic happens in aging – not between the rum and the fresh oak, but between the rum and the broken-down oak from a process that takes many years to develop.
