Origins & Craftsmanship

  • Produced by The Beverly Spirits in collaboration with Cedar Ridge Distillery (Swisher, Iowa). They use straight rye and straight bourbon whiskeys sourced from Iowa and Indiana.

  • Bottled at 48% ABV / 96 proof.

  • Majority-rye grain bill (i.e. high rye) in the blend. The blending is done to bring out the bright baking spices rye is known for, while letting bourbons sweetness (corn, vanilla, etc.) help smooth the edges.

Tasting Profile

Element Notes Colour / Appearance Golden-honey, with warm amber tones; develops fairly substantial legs when swirled. Nose / Aroma Toasted oak, vanilla, caramel; baking spices like cinnamon, nutmeg; a mild citrus lift (lemon peel or citrus zest) appears in early nosing. Palate / Taste Spicy rye influence up front with black pepper and baking spice; caramel and vanilla carry you through; sweeter notes like brown sugar; mid-palate perhaps a touch of dark fruit or vanilla cream. Finish Medium to long; toasted oak lingers, with caramel, toffee, candied pecans; spice returns (pepper, maybe some oak tannin); smooth but noticeable warmth.

Food & Cocktail Pairings

  • Cocktails / Serving Styles:
Neat or with a large ice cube to let the wood and spice open up.
In classic whiskey cocktails (Old Fashioned, Manhattan variants), use as the base whiskey to bring spice + sweetness.

  • Food Pairings:
Rich meats: roasted pork, smoked ribs, grilled steak the oak and spice help cut fat and complement char.
Desserts: pecan pie, caramel flan, butter-toffee desserts, chocolate with nut or caramel elements.
Nuts & Dried Fruit: toasted pecans or walnuts; dried cherries or figs.
Cheeses: Aged cheeses, sharp cheddar or aged gouda, that can stand up to a whiskey with spicy wood.
